I get the impression that they will dedicate an IP address to your site
(instead of hosting several sites on one IP address and using Host headers
to differentiate between those sites).

Generally speaking, yes. I guess the hosting provider might prevent this
by configuring specific Host headers on the server, but I don't think
that's very common.
