Preparing for DNS

I think I have our office network setup for AT&T to point queries to
efinnet.com to our new boxes.  One question I have is, are there things I
should check on our network to make we're ready?  I'd like to test sending
mail to our server but the MX records aren't ready, and  as far as I know (or
as far as I've tested) you can't send email to addresses, only names.
