Is that subnet behind a router that's forwarding the dhcp request?  ie, ip helper-address on a cisco?  If so, I believe the source of the request is the primary IP on the interface, so you can create the new subnet, make it the primary IP on that interface, secondary the old one, and users will transition over time.
