The DHCP server uses syslog() for output, so you can get DHCP logs in a separate
file or filter them out of other logs pretty easily.

Unfortunately there is no comprehensive list of log messages. A quick scan
through the source code shows that there are over 1000 separate log messages.

It is hard to give you a recommendation, because it depends on what you are
parsing the log files for. Can you tell us more about your requirements?
